Sooooo, I can’t cook.
Okay – that’s a lie, I guess technically I CAN cook. I’m just generally really bad at it and unmotivated to do so. That’s why when I started this blog, I made it one of my missions to add a food section. Why you ask? I wanted to challenge myself to spend more time learning how to / learning to actually like cooking.
I find that with me cooking is much like working out. The mental roadblock for me to begin the process is the hardest part to overcome, but once I do it I feel great!
One thing I hate about cooking is when you think you have everything you need and then you find out you’re missing one small ingredient and have to make a special trip to the store. No no no no nooooooo. No special trips to the store. I hate the grocery store. So when I friend gifted me with a free week of Blue Apron, I thought “great!”
…and then I forgot about my Blue Apron delivery while I was on vacation and it spoiled in my apartment building’s office…oops!
So here is my second attempt at Blue Apron-ing. I made spiced pork chops and mashed potatoes – it turned out great!
– 2 center-cut pork chops
– 6 ounces fresh green beans
– 3 cloves garlic
– 1 bunch kale
– 1 lb Yukon Gold Potatoes
– 2 tbsp butter
– 1 shallot
– 1/4 cup crumbled goat cheese
– 2 tsp pork chop spice blend
* also needed salt, pepper and olive oil (I substituted with coconut oil)
